
(Aka How I almost burnt the house down)
This is my go to – ‘It is late and there is nothing to eat’ meal. I don’t even have to think when I make this. Just throw a bunch of veggies and frozen sausage in a sheet pan in the oven and thats it. However, it can be a little too simple, so much so I turn my brain off when making this one.
One night we got in late from work, so I threw this in the oven for a quick dinner. We ate, threw the handful of dishes in the sink, and then went to bed. The next morning, while going to get breakfast, J yells: “you never turned the oven off last night!” 😳

So yeh. Don’t be like me. Turn your oven off after use when making this.🤦🏽♀️
For those local to the Toronto area, I get my sausages from East Meats West, a small family run sausage shop that I highly recommend. These are one of those foods I will drive out of my way to buy. I keep them on hand in the freezer for this quick sheet pan dinner or to just throw on the grill and eat. So yum!

This is less recipe and more a formula for dinner in a pinch: Just throw a bunch of chopped veggies in thin layer on a sheet pan lined with parchment (I use any combo of sweet potato, potato, carrots, red or green peppers, broccoli, green beans, onions, jalapeño and garlic – whatever is in the fridge that night). Aim for about 2 large handfuls of chopped veggies per person.
Make sure they are all chopped to the same size – a small dice – for faster cook time and remember not to crowd the pan. It should be like a party not a mob of veggies – let them breathe a little.
Drizzle with 2-3 tbsp olive oil and 1-2tsp each of seasonings of choice (I like salt, pepper, garlic powder, chilli flakes and Italian seasoning) Mix well to coat and spread out evenly on the pan. Top with a layer of your favourite chopped frozen sausage (2-3 per person).
Bake in a preheated 400*C oven till veggies are soft and sausage is cooked through (about 20-30mins).

1 pan. 5 minutes prep. 20-30 minutes in the oven. Boom. Dinner. Done.
Serve as is, or with a salad and any sauce of your choice. I like it served over a big bowl of baby spinach or mixed greens with a simple balsamic dressing or tahini sauce and sometimes an avocado.
This one is on an almost weekly rotation at our place. Until we run out of sausages that is. Oh, and please don’t forget to turn your oven off afterwards!🙈
Easy Weeknight Sheet Pan Dinner
Ingredients
- 1 carrot
- 1 large onion
- 1 head broccoli
- 1 sweet potato
- 1 green pepper
- 1 jalapeno
- 2-3 cloves garlic
- 3 tbsp olive oil
- 1 tsp salt
- 1 tsp chilli powder
- 1/2 tsp black pepper
- 2 tsp italian seasoning
- 2 tsp garlic powder
- 8 frozen chicken sausages
- 1 cup baby spinach leaves (or other mixed salad greens)
- 1 tbsp chipotle mayo (or just mix 1 tbsp mayo with 1/8 tsp each chilli powder and smoked paprika)
Instructions
- Preheat oven to 400*F.
- Chop all the veggies to 1/2 inch cubes.
- On a parchment lined baking sheet (or two) mix all the veggies with the remaining ingredients (except the sausages, spinach leaves and chipotle mayo). Spread the veggies out in a thin layer.
- Chop up the frozen sausages into 1 inch pieces and sprinkle over the veggies.
- Bake for 20-30 mins till the veggies are soft and the sausage is cooked through.
- Serve warm on bed of baby spinach leaves and dollop of chipotle mayo.
