Dinosaur Kale Salad
Yup this salad is as cool as it sounds. Ok maybe not that cool. It is a salad after all. But how cool will you sound saying you eat dinosaur (kale)?!
Servings: 4
Ingredients
- 2 Bunches Dinosaur (Lancinato) Kale (regular kale will work too. But I find the Dino kale tastes better!)
- 1 lemon
- 2 cloves garlic
- 4 tbsp olive oil
- 2 tsp salt we use Himalayan Pink Salt
- Ground black pepper & red pepper flakes to taste
- 1/2 cup almond flour
Instructions
- Remove the stems from the kale and rough chop the leaves and throw them into a big bowl.
- Juice the lemon and finely chop garlic. Toss them into a jar with a lid.
- Add the olive oil, salt and peppers. Cover and shake to mix the dressing.

- Pour dressing over the kale and massage really well with your hands (Bonus: I found out that this is also a really great way to find out if you have any paper cuts on your fingers!).
- Refrigerate until you want to serve. The longer the better. (It will keep for 3-4 days in the fridge).
- Sprinkle with almond flour before serving.
Notes
Serve with protein of choice. We tried it with roast chicken, shredded beef and boiled eggs. All were delicious. Enjoy!
