Paleo Cookie Dough Bites

A great snack without all the guilt.

Ingredients

  • 1/2 cup cashew butter
  • 1 tbsp maple syrup (leave out for sugar free or whole30)
  • 1 tsp vanilla extract
  • 1/2 cup almond flour
  • 2 tbsp coconut flour
  • 1/2 tsp salt
  • 1/2 cup chopped nuts* (highly recommend a mix of macadamia nuts, hazelnuts and/or almonds)
  • 4 tbsp hemp seeds

Instructions

  • In a medium bowl, mix all the ingredients except hemp seeds, till smooth.
  • With clean hands, roll into ping pong ball sized balls.
  • Spread the hemp seeds out in a shallow plate, and roll the bites into the hemp seeds to coat all over.
  • You are ready to snack, or freeze them for firmer, almost ice-cream like bites.

*Or try adding chocolate chips.
