Ingredients
2tbspoil
2lbsground beef
1tspsalt
2tspgarlic powder
1tspchilli flakes
2tspblack pepper
1inch ginger
2cloves garlic
1large carrot
1medium onion
1 red/yellow pepper
11 jalapeño
1handfulthai basil(italian basil will work, but the flavour will be a bit different)
3tbspcoconut aminos
1tbsphot sauce(sriracha works well)
Instructions
In a large saucepan or wok heat 1 tbsp of the oil on medium heat and add the beef, salt, garlic powder, chilli flakes, and black pepper. Allow the beef to brown, stirring occasionally to break down any large lumps.
Meanwhile, peel and dice the carrot, onion, jalapeño, red pepper and ginger. Mince the garlic and thinly slice (chiffonade) the basil.
When the beef has browned, remove from pan and set aside.
Heat another tablespoon of oil in the same pan and add the onion, garlic, and chilli. Stir fry for 2 mins, then add the carrots. After another 2 mins, add the bell pepper and the browned beef back in. Stir fry till for about 3-4 mins to allow the ingredients to heat through. The idea is to not over cook them so they have a bit of bite.
Add the coconut aminos and hot sauce. Give it a taste and adjust seasonings if necessary.
Then turn off the heat and add the basil so it can wilt in the residual heat. Serve warm on a bed of rice or noodles and top with bean sprouts and a fried egg!
Notes
Serve over rice (regular or cauli rice) with a fried egg on top.
