Simple Shortbread Cookies

This is a basic shortbread recipe that is always a winner. Also, add a square of your fav chocolate on top and it takes it to the next level.

Ingredients

  • 1 cup unsalted butter (room temperature)
  • 2 cup flour
  • 1/4 tsp salt
  • 1/4 cup sugar
  • chocolate bar of choice (try toblerone or any good quality chocolate bar)
  • water, if needed

Instructions

  • In a large bowl with a mixer (or use a hand mixer) mix all the ingredients, except the chocolate till smooth. About 5 mins. The dough will be a bit soft but still come together. If it is looking a bit dry add 1-2 tbsp of water and mix till it comes together. 
  • Wrap the dough in plastic wrap and refrigerate for at least 1 hour. (You can even freeze this dough for upto 3 months. When you are ready for cookies, just defrost and bake).
  • When you are ready to bake, preheat oven to 375*F.
  • On a lightly floured surface, roll out the chilled dough to about 1/4 inch thick. Use a cookie cutter or a small cup to cut cookie shapes. 
  • Bake for 8-10 mins till the edges just start to turn golden (the tops will remain white). 
  • Wait for the cookies to cool completely before handling them otherwise they will fall apart!

Notes

Quickly bring cold butter to room temperature by boiling a cup of water in the microwave for 2 mins. Then remove the cup of water and place the butter in the warm microwave and close the door (don't turn it on). It should soften in the warmth of the microwave in a few minutes.
